A refreshing watermelon & feta salad for your Monday 💃🏻🍉✨ The #cincodemayo festivities are spilling over into this week over here and no one’s complaining 😁 I’m helping a friend prepare a Mexican meal for a gathering at her home tonight, and this salad is on the menu. Sweet watermelon, meaty heirloom tomatoes, salty feta, peppery arugula, and fresh, bright herbs. I’ll go a bit lighter on the greens this time and focus more of the melon, but this is the gist: Simply dice a small watermelon into 1" pieces and chop 2 or 3 smallish heirloom tomatoes into bite-sized pieces. Drizzle good quality olive oil and squeeze the juice from two limes over the lot. Scatter a small handful of coarsely chopped fresh basil & mint, then add a generous handful of arugula. Next comes crumbled feta - the more the better. Finally, freshly ground black pepper, and probably the most important, a smattering of Maldon salt right before serving. I bought a huge bottle of Tajín {a Mexican lime, chili & salt seasoning} this weekend so that will added too 🌶✨ Now, give me all your best tips to choose a perfect watermelon!
