In my experience, Italian cooking leans toward simplicity and makes use of the most humble ingredients: spaghetti tossed with olive oil, garlic, and chili; a pot full of beans simmered with garlic, pepper, a sprig of rosemary and a splash of olive oil. Or this dish that my Grandmother loved to make for my Father, made of stale day old bread, eggs, cheese, garlic and onion. @Regranned from @cookdrankeat - SUPER BOWL RECIPE! With the big game almost upon us I felt like I should share a badass chili con queso recipe aptly named, Scotty's Badass Chili Con Queso. Now unless I make something from scratch (except for pie crusts and pasta) I don't necessarily claim it as my own recipe. Because this has pre-made stuff this is more of a "creation". I know, I'm weird. I also don't watch cooking shows and love the smell of bleached white clothes straight out of the washing machine but that's a whole nother story. - - - - Ingredients - -1 package @mccormickspice Chili -1 bell pepper chopped -1 small onion diced -1 bay leaf -1 16oz can kidney beans (non-bean people I don't wanna hear it) -2 14.5 oz cans stewed tomatoes -1 tbsp chili powder -2 cloves garlic -1 12 ounce bottle @shinerbeer Shiner Bock room temperature -1 8oz bag @kraftrecipes Colby and Monterey Jack shredded cheese -1 jar @tostitos Medium salsa con queso -1 lb ground meat -4 roasted hatch chilies chopped (optional) - Directions - Season the meat with salt, pepper, garlic powder, oregano and chili powder and place in pot to brown. Once browned, drain and return to pot. Add onions, bell pepper and garlic and cook about 5 minutes stirring frequently. Add McCormick chili mix, beans, tomatoes and bay leaf and simmer for about 20 minutes or until the bell peppers have turned from bright green to dull green. While stirring, mash up the tomatoes a little to break them down a bit. Add the beer and chili powder and simmer for another 15 minutes stirring frequently. Now, this is where it gets slightly less than exact but trust me on this. Using a ladle, remove one bowl of chili from the pot. What sized bowl? I dunno, the size you would remove if you were making yourself a tasty bowl of chili. Remove the the chili, set it aside, enjoy it. It's delicious. Remove the pot from the heat and add both cheeses and the chiles. Stir to combine, and um put it somewhere warm? Do whatever you would normally do with a big ole pot of delicious Cheese. Late night cookin in the IG story, recipe 👇🏾👇🏾👇🏾👇🏾 - - - - - - 1 pound ground bison, beef or turkey 1 cup beef stock 3 cloves garlic, chopped 1 small onion chopped 1 green pepper chopped 1 can stewed tomatoes 1 8-ounce can tomato sauce 2 1/3tablespoons chili powder 1 teaspoon ground cumin 1 teaspoon ground oregano ¼ teaspoon curry powder 1 teaspoon salt 1 teaspoon pepper ¼ teaspoon garlic powder ¼ teaspoon onion powder ½ teaspoon red pepper flakes 1 bay leaf One 15-ounce can kidney beans, drained and rinsed 12 ounces chocolate stout beer Shredded Asiago, for serving - Season the ground meat with salt, pepper, oregano and chili powder and brown in a skillet over medium heat. Drain off the excess fat and then place in a large pot. Add beef stock, onions, bell pepper, garlic, cumin, oregano, garlic powder, onion powder, salt and pepper, bay leaf, beans, stewed tomatoes, tomato sauce and 2 tablespoons of the chili powder. Stir together and simmer on low uncovered for about 20 minutes stirring every five minutes or so. Add the beer, remaining chili powder and red pepper flakes. Simmer for another 20 minutes stirring every five minutes. Serve with shredded Asiago.
