An autumn drink to celebrate Mabon with.
- 2 sweet potatoes, peeled, cubed, steamed, and cooled
- 2 cups unsweetened almond milk
- 1/4 cup maple syrup
- 1/4 teaspoon (tsp.) ground nutmeg
- 1 tsp. kosher salt
- 1 1/2 cups ice
- Peel sweet potatoes and cut into cubes
- Place a steamer basket or colander in a large pot. Add water until it reaches 1 inch below the basket
- Place sweet poatoes in basket and turn heat on. Bring water to boil
- Once boiling, turn heat to medium and cover pot for about 20 minutes or until you can insert a knife into a potato without resistance
- Remove sweet potatoes from basket and let rest until completely cool to the touch
- Place all ingredients into a blender in the order above
- Blend until smooth, pour into a glass, and enjoy!
