Xians often say things like “if the resurrection wasn’t true, why would the apostles go through persecution/torture/death?”

And they have a point. Likewise, if Islam isn’t true, why would people hijack planes and blow themselves up? And if faith healing isn’t true, why would people subject their sick kids to it, rather than take them to a doctor?

Because faith.

There exist no testimonies of 500 people, just Paul, who was not present at the time and never met Jesus, saying there were 500 witnesses.
Sorry, but that’s not evidence, it’s hearsay.

This is the entirety of what it says.

After that, he was seen of above five hundred brethren at once; of whom the greater part remain unto this present, but some are fallen asleep.

That’s it. That’s the whole thing. It’s not even an anecdote; it’s an anecdote (Paul) asserting the existence of anecdotes (500 people) about the supposed resurrection. There is literally nothing to go on.
