I enjoy the Two Cakes Philosophy and I believe it deserves its place enshrined in fandom culture.
Forgive me for the extended metaphor but I also want to simultaneously celebrate what I’m calling Bakery Display Case Philosophy. You know when you walk into a bakery and the display case is full of beautiful treats? And there’s a variety of different colors, textures, and flavors to discover? And that’s so deeply exciting?
You might say to yourself, “No one is going to want to read this pairing. No one is going to want to want a character study of that character. No one wants genfic in this fandom, only shipfic.”
And you might use that to discourage yourself from writing a certain fic.
Fandoms, like bakeries, need cakes and cookies and éclairs and cream puffs and shortbread and brownies and pies and tarts and petit fours and turnovers and cinnamon rolls and madeleines and meringues—and so many other things—to survive.
Write your dark chocolate pistachio croissant fic. Your fandom needs it actually.

So Windy Bear was originally planned for the Spook Me multifandom ficathon a few years back. My prompt was "evil toys."
John was going to notice at some point that Rosie had a new favorite toy, a teddy bear she calls "Windy." He has no recollection of buying her this bear, and no idea where she may have acquired it, but she has a lot of toys and it doesn't cause him alarm at first. Until strange and dangerous things start to happen…
Alas, I never finished it. I sort of wrote myself into a corner and was never quite able to resolve whether I wanted the evil to be supernatural or more realistic in nature. I hope to return to it at some point, because I do love a good spooky story.
Here's a snippet!
"Wendy," John said. "Why Wendy?" Rosie ignored him, sucked on the tassel of her hooded jacket. "Rosamund," he said. She looked at him. Her eyes were big and blue. Mary's eyes. "Your bear. Why Wendy?" Rosie shrugged. "That's what the lady was called." "What lady?" "The lady who gave me Wendy-Bear." He swallowed. "Her name was Wendy? Like Peter Pan?" "No," she said. "Not like in Peter Pan?" "Not Wendy," she said. "Windy." He pinched the bridge of his nose, at a loss. "Like the East Wind," she said, and John's chest twisted in fear. From downstairs, there came the sound of breaking glass.

It's an AU where Sherlock and John met under slightly different circumstances, and during a weekend they spend at a hotel together, there's a murder, and John is the glaringly obvious suspect. Everyone thinks he's guilty except Sherlock, who just knows John is innocent.
There's a lot of this fic already written, but since it's another monster there's a lot still to do.

The premise is that John, Mrs Hudson, Lestrade and Molly know that Sherlock is alive and do their own investigation into Moriarty, while John keeps in touch with Sherlock as well as he can. They get to meet up occasionally, cue hardcore PINING. There's quite a bit of this fic already written, but there's still a lot to do. This is a slow burn monster, and I need to be in the mood for slow burn 😉.

That's an AU based on a popular mystery novie from the 60s where John"s wife gets murdered and he discovers her double life. The first third of this is pretty far along, but I got stuck somehow because it's VERY plotty and that's not my biggest forte.
