okay, so espaliers are beyond sexy, they are so unbelievably productive
The basics are just... pruning growing trees so they are more 2 dimensional, usually placed against walls. It takes a few years to form/ raise, but they are much easier to maintain than free growing trees in the long run.

Not only is it more accessible, easier to harvest fruit, but the design has a double purpose; the walls hold and release heat that can keep warm-weathered plants alive during Northen winters!
There are people who use this method to grow avocado, fig, etc trees outdoors without electricity in -20C weather.

Rheum nobile, aka the Sikkim rhubarb or noble rhubarb, is a giant herbaceous plant native to the Himalaya, from northeastern Afghanistan, east through northern Pakistan and India, Nepal, Sikkim (in India), Bhutan, and Tibet to Myanmar, occurring in the alpine zone at 4000–4800 m altitude.
At 1–2 m tall, it towers above the other shrubs and low herbs in its habitat, and it is visible across valleys a mile away.
R. nobile is often called a glasshouse plant because of its outer curtain of translucent leaves which pass visible light, creating a greenhouse effect, while blocking ultraviolet radiation. These are likely defenses against the increased UV-B exposure and extreme cold in its high altitude range.

I wish I wasn’t allergic to avocado bc my tree has at least 20+ avocados! I just picked some grapefruit, blood oranges, and regular oranges and I’m now waiting for the guava and lemons to grow in more.
