I made a yummy quinoa and bean dish for dinner! It was pretty good! It had quinoa, beans, vegetable stock, green peppers, onions, corn, cumin, cayenne pepper, and I sprinkled a little cheese on top. :-) Om nom nom. I couldn't get a decent picture of it, so I provided this dish, which looks very similar. :-)

Here's the dish I made tonight. Mango curry chicken with Mexican quinoa salad! It came out even better than expected! I cooked the chicken perfectly and the salad was so refreshing!  The chicken had curry, cumin, thyme, and ginger with caramelized onions, scallions, mango, and lime juice.  In the quinoa salad is green pepper, red onion, minced garlic, cherry tomatoes, corn, avocado and black beans with cumin, chili powder, salt, pepper, and dressed with a little bit of olive oil and the juice of one lime.  Yum yum Yummmmmm I can post the official recipes if anyone wants! :D

Forget crappy store-bought veggie burgers. These are delicious. I used about 1 cup of sweet potato with 1 cup of cooked quinoa and 1 egg, which made 4 small-ish patties. Scale up accordingly.

To cook quinoa, rinse well and then add 1 part quinoa to 1.5 parts water in a pot. Bring to a simmer, lower the heat, cover, and cook until water is absorbed (about 15 minutes). Almost every other quinoa recipe I see says 2 - 3 parts water and it’s why I hated quinoa for so long — it turns to mush! Less water will give you fluffy quinoa every time.

So tonight I cooked garlic chicken with quinoa and sauteed veggies! Its honestly the first REAL meal that I have cooked in my new kitchen in my apartment! Lol. The picture I took is super crappy but it was actually really good! I just minced up 4 cloves of garlic and cooked the chicken in it with some olive oil. Boiled the quinoa in fat free/low sodium chicken broth with some garlic, onion, chives, basil, and red pepper. Then sauteed up some zucchini, summer squash, and red peppers in the remaining oil/garlic/fat mixture form the skinless chicken. Overall a success! Chris loved it! OH, and don't I look cute in my new(ish) cupcake apron? Its so adorable! I got it at TJ Max. I'll be getting more and more with time... :-)

I ALSO bought quinoa today.

Iv seen people all over the healthy/weight loss/fitbler community post about how great quinoa is and how good it is for you...

And a few weeks ago one lab group made a delicious quinoa salad that I REALLY loved. 

And now that I am trying to reduce my gluten intake... I need a versatile carbohydrate to incorporate into my diet... because chex, gluten free pasta, and brown rice get old after a while... 

I know you can use it in many different ways... sweet, savory-- breakfast  lunch, dinner, snacks... the possibilities are endless!

Was also a bit pricey... $4.99 for the bag pictured above. BUT AGAIN-- its 4lbs worth of they teeny tiny grains! Its actually a pretty good deal. For me... shopping so frugally.. I am not used to buying anything over 3 dollars unless it is meat! But both this quinoa and the chia seeds have a long shelf life and are super versatile so I know they are good investments!

I'm going to try to make the quinoa salad one day this week/weekend. I'll post some pictures and the recipe and let you know how it went! :D
