So tonight I cooked garlic chicken with quinoa and sauteed veggies! Its honestly the first REAL meal that I have cooked in my new kitchen in my apartment! Lol. The picture I took is super crappy but it was actually really good! I just minced up 4 cloves of garlic and cooked the chicken in it with some olive oil. Boiled the quinoa in fat free/low sodium chicken broth with some garlic, onion, chives, basil, and red pepper. Then sauteed up some zucchini, summer squash, and red peppers in the remaining oil/garlic/fat mixture form the skinless chicken. Overall a success! Chris loved it! OH, and don't I look cute in my new(ish) cupcake apron? Its so adorable! I got it at TJ Max. I'll be getting more and more with time... :-)
SO dinner was a great success! My sauce came out absolutely delicious! Along with the meatballs and bruschetta!
While I was at kohls today-- I bought a new food processor/blender thing with a gift card which really helped me make the sauce. I processed an entire carrot, green pepper, zucchini, 10 mushrooms, 1 whole onion, and 4 garlic cloves really finde-- so the sauce was very smooth but you get the flavor and the nutrients from all the vegetables! Meatballs were turkey meatballs with italian bread crumbs. And the bruschetta was my favorite! I just used my organic white bread because I did not want it to go to waste. I cut 2 pieces in halves then toasted them with fresh sliced mozzarella pearls. In the bruschetta mix is diced roma tomatoes, fresh basil, garlic, salt, pepper, olive oil, and balsamic vinegar.
Also, this entire meal was about $2.50 per person. This shows you that you CAN cook a healthy meal on a budget-- and not have to sacrifice taste!
