In the mood for something low maintenance but hot? Chili it is! This is a FOUR spoon recipe as it requires a stove and some light stirring Ingredients: 8 ounces/a pound of meat or meat alternatives Two cans of beans A 15-16 ounce can of tomatoes, preferably crushed Vegetable mix if you want 1. Put meat in pot on medium heat 2. Cook it through, you don't have to really stir it except to be sure its cooked all over 3. Throw in both cans of beans, no water because there's a lot of sodium in it 4. Add tomatoes 5. Season to taste (i use cumin, salt, and pepper) and stir on occasion 6. Come back in ten-fifteen minutes and add vegetables 7. Let them warm through and then serve over rice or with some bread or crackers. The entire recipe took about twenty minutes, most of them idle. Grits (low spoon)
If you're a bit tired of cereal and oats for breakfast, I highly recommend malt o meal/grits! It's incredibly cheap, at about 11¢ an ounce, is high in iron, is vegan and is easy to make! Just follow the instructions, which is generally just putting the wheat and some water in a bowl, and then microwaving it for a minute or two, checking to make sure it doesn't overflow. You can add all kinds of stuff to it, too! Its just like rice. Butter, sugar, eggs, milk, jam, apple slices, cheese, bacon/sausage, salsa, salt or pepper are some common ones. There's also chocolate grits for some variety.
Miso Bean Noodle Soup (Spoons level: Low)
One of my personal favorites, this is a common quick meal for college students in Asia. Comforting, lightly-seasoned, it makes for a good bowl at the end of a long, hard day of having low spoons!
Ingredients:
Vermicelli noodles - one package is good for at least two meals! These can be found in any Asian grocery store. Popular brands look like this, or this.
Tub of miso paste OR Dashi soup stock - lasts a long time!
Your choice of meat and/or vegetables. Chicken, cabbage, mushrooms, and seaweed recommended.
Tofu of your choice of firmness. Soft is most popular.
- Soak the vermicelli in cold water to slightly soften them.
- Microwave sliced chicken for 14-16 minutes. Boned chicken will add extra flavor to the soup.
- Add one tablespoon of miso/Dashi for every cup of water, then boil. Add more to taste.
- Add chicken and other cooked meats. Add cabbage, mushrooms, and other vegetables.
- Add diced tofu along with vegetables if the firm kind. Add at the very end if the soft variety.
- Let simmer for 15 minutes.
- Add noodles. These will cook very quickly. They’re fully cooked once completely transparent, with no cloudiness apparent.
