Dinner June 25, 2016 Petrale sole with dill and parmesan and a side of cucumber fried in brown butter. (It tasted exactly like zucchini, so weird.) I also had a little bowl of California blend veggies but they didn't make it in the picture.
I saw this in the take-and-bake refrigerated section at Costco and wanted to recreate it. Pesto, butter, and salmon… All pretty delicious and low carb.
I used 2 tablespoons of pesto and a stick of butter. (Next time probably less butter, LOL.) I baked it at 325° for 18 minutes and it tested at 125° internal temp. Served with a side of simmered green beans. I’m stuffed silly!

This is what I had for dinner last night. swordfish topped with shrimp, salsa, and green beans. my boyfriend made it for my family over at my mom's house while we were visiting. He's never made it before but he knocked it out of the park. I would definitely eat this again! linesandcubes
