-Boneless tenderloin back ribs (cooked on a panini maker - I know it seems weird but it works really well) -Roasted cauliflower and carrots with rosemary

— Work has been a literal nightmare latey. With that nightmare came almost no sleep and bad food choices out of exhaustion. This is my first day back on the keto wagon and I’m very happy about it.

The Original Cauliflower Wrap Serves: 2 wraps= 2 cups of veggies+ 3oz of protein (add 5oz of bbq pulled pork or chicken for a complete supper meal!)

Ingredients Curry Wraps: ½ head cauliflower, cut into florets 2 eggs ½ tsp. curry powder ¼ tsp. salt Garlic Herb Wraps: Substitute 1 minced garlic clove and ¾ tsp. dried herbs (basil, oregano, thyme or a combo) for the curry powder

Instructions 1. Preheat the oven to 375 and line two baking sheets with parchment paper. In a food processor, pulse the cauliflower florets until they form a crumb-like texture. 2. Place the crumbles and ¼ cup water in a saucepan with a tight fitting lid and cook on medium high heat for 8 minutes, until tender. 3. Drain the cauliflower, then transfer to a clean kitchen towel. Firmly squeeze any excess water from the cauliflower. 4. In a bowl, stir together the cauliflower and remaining ingredients. 5. Form two thin circles on the parchment-lined baking sheets. With a spatula, press down the “dough” so it forms a thin layer. Keep the wraps compact–there should be no parchment showing through the mixture in any area of the wrap. 6. Bake for about 17 minutes until dry and pliable. Gently remove to a wire rack to cool so the bottom does not become soggy. Use with light fillings or tear into pieces and use to scoop up fillings.

Breakfast Sushi with Bacon & Cheesy Caulirice

(adapted for low carb / keto from Tym Bussanich)

Ingredients (make 6 portions)

  • 10 slices of streaky bacon
  • 300g riced cauliflower
  • 200g cheddar cheese
  • salt + pepper and favourite spice
  • 2 eggs

Instructions

  1. In a bowl mix riced cauliflower, cheddar, and eggs
  2. Lay a large piece of tin foil on counter and make a bacon weave. You can drive long bbq sticks on each end to keep bacon from pulling apart.
  3. Evenly distribute cauliflower, cheddar and eggs mixture on the bacon weave
  4. Leave one end of bacon weave blank ( about 2 inches)
  5. With the help of the tin foil wrap breakfast sushi..
  6. You can use 3 extra tooth picks to hold the 3 pieces of bacon together so they don’t pull apart while cooking
  7. Place on baking sheet and remove tin foil..
  8. Cook at 190c for 45 minutes  (or tell bacon is fully cooked)
  9. Take out of oven and slice..
  10. Enjoy

Nutritional values per portion: 244 calories, 2g Net Carbs (1g Fiber), 19g Fat, 16g Protein
