How to make this healthy, tasty *vegan* spread:

1. Soak your raw cashews overnight (preferably - although 30 minutes would probably work too!)
2. Drain them and blend in a high powered blender or food processor with all of the listed ingredients except for the water
3. Once mixed together - scrape down the sides and add the water
4. Blend until smooth, scraping down the sides as you go
5. Scrape into a bowl/container and sprinkle chives on top. Cover and refrigerate. Can be eaten immediately but better after a little refrigeration.

*Note: if you don’t have nutritional yeast you can omit, also recommended to add a dash of black pepper. This recipe can be adapted - try adding basil, sun-dried tomato or olives for example.

Can’t believe I forgot to post this!

I made falafel the other day and it was freaking amazing!!

Vegan, baked, no added oil, super cheap delicious and easy food.

Falafel ingredients: makes about 30!

2 cans of Chickpeas 1 tsp Veg stock powder 1/3 cup of Water Pinch of Salt Handful of fresh/1 tsp of dried Coriander 1 tsp dried Cumin 1 tsp dried Paprika (I used smoked) ½ large Onion 3 cloves of Garlic 2 Tbs of Chickpea flour (any flour = ok) Handful of fresh Parsley (optional) ½ tsp of baking soda

Total recipe cost: about £1.30

Just put it all in a food processor and then form it into walnut size balls and then squish a little so they don’t roll around on the baking tray. Bake for 10 mins at 210*c and then flip and bake for another 10 mins.

It’s honestly that easy. ^.^
