The oat bars I often have during my walk to work around 7:30am aren't usually enough to hold me over till lunch at 12:45. But I found out that my immersion blender fits into my 600ml Pioneer thermos, so I can make a smoothie at 6:45am without waking the neighbors 🤣 (my normal blender is super loud).

6:45am coffee w soy milk

8:45am smoothie @ work (1/3 cup oats, flaxseeds, soy milk, peanut butter, cocoa powder, banana)

1:15pm cucumber hummus sandwich, apple, trail mix

5:45pm a fig, "hutspot" (mashed potatoes, carrots, parnip, onion) w BBQ lentils and for dessert: 2 pieces of a Dubai bar, which my boss got me 🥰

I thought it would taste like pistachio but it didn't. I honestly don't understand what the hype is all about. But maybe it's also that I mostly prefer dark chocolate!

Exercise: walked to work 50 min total

Day off, I had quite an appetite.

B - leftover pizza, artichoke hearts, 2 ww crackers w Nutella

L - interesting salad of leftover peas, olives, tuna, hummus and chopped apple, a cracker w cheese, a slice of gingerbread, 5g dark chocolate

D - a whole mango 🥭 - it was delicious! Thankfully since it cost me €2,50 lol. +roasted root veg and boiled chestnuts - an autumnal feast!, 5g dark chocolate and some wine

Exercise: cleaned the whole house , 30 min on the elliptical (while watching the documentary The Magic Pill), rode my bike to the greengrocer (15 min total).

Field service in the am and worked a front desk shift from 2-7pm.

B - soy latte, blackberry walnut oatmeal

L - hummus cucumber sandwich, apple, trail mix

D - green bean salad, pasta w tomato sauce, some wine and 10g dark chocolate

Exercise: 30 min calisthenics before breakfast and walked home from work (30 min).

I didn't plan on it but everything I had today was vegan, except for the latte at work.

The baked oat bars I made to have for breakfast while I walk to work turned out pretty good:

4 c fine oats

2 c soy milk

1 heaping tbsp apple butter

1/8 tsp salt

2 handfuls raisins

8 tbsp flaxseeds

Bake @ 200 degrees Celsius until brown and crispy.

Day 4/10 🟠

On my period so hungry. All. The. Time. Did manage to go for a run. Spring is in the air!

B - yogurt, muesli, grapes, nuts. Apple +pb

L - toast + gram flour omelette, red pepper, date, chocolate

S - 1/2 oat bar (50)

D - spinach, pasta, alpro pudding

L - Dahl w greens, a ww wrap, nuts+date, cracker+pb, my daily dose of 10g dark chocolate 🍫

D - fruit, bok choy stir fry w rice

Still feel hungry. Probably due to the cold and lack of sleep.

Gratitude 🥰

  • The sun shone! After weeks of rain it is so wonderful to have a blue sky and bright sunlight.
  • I got to spend time with M and J in service today ❤️
  • It was so nice to have the time to walk back home from work and unwind.
  • I bought secondhand leather boots, they came in today and I love them!

I had a really nice day! Late breakfast of course.

B - pear w yogurt, muesli, nuts, coconut & cardamon

L - ww crackers w pb & a banana

D - vegan chili w roasted carrots & potatoes 😍, apple sauce

Last night was nice, we went over to P&K. O&D came over, too and we played the Friends Scene It game. After that I took a really long, hot bubble bath whilst reading a new library book! 🛀🏼 📖 It's titled "Big Lies in a Small Town" by Diane Chamberlain, I'm really enjoying it.

Today we slept in but after that I got a lot of stuff done that I've been putting off for ages: I mended a cardigan, polished my leather boots, ordered stamps 🤭. I also simplified my wardrobe. I've been reading about Project 333 and I packed up like half the clothes I had in my closet. I still have like 60 items in there but it's literally given me some air. So we'll see how that goes. ☺️

3 square meals & no cravings today! Except a sunshine craving. It's like life loses its shine this time of the year. I am tired of struggling to think positive at the moment. Then I feel guilty because I have no reason to be sad. I'll try again tomorrow... Maybe I should start a gratitude journal again...

D - an orange, black bean & broccoli soba noodles

I made lentil meatballs with panko and a spice mix for meat and baked them in margarine but they soaked it all up so they were so rich I couldn't finish it all.
