Instead of bouillon cubes I just add 7g of sea salt per liter, I think it keeps the vegetable flavors pure!

This week's recipe (week 18):
We've heard it all before! Cook onions, garlic, broth, dried lentils, spices, sweet potatoes and spinach into a comforting, warming goodness. I used frozen spinach here. Most items are pantry staples so it's good to know that if I buy a sweet potato I can make this cheap and healthy meal anytime. What I like about it is that it can be made ahead!
Would I cook this again? 👍🏼 But I'd add some more stuff to it to make it more flavorful. Either way, it's a good basic recipe to work from. Next time I'd add coconut milk (not low fat anymore but totally worth it IMHO.)
Roasted pumpkin, plantain & pink/white sweet potato. Served with shredded coconut & Thai peanut sauce 👌🏼
I made the EHH Caribbean sweet potatoes and they were very yum! It's also very simple. Basically dice 2 sweet potatoes and a red apple. Rinse w water. Add spices (interesting combo incl. ginger, nutmeg, Italian spices) and roast.
I had them on a bed of steamed kale w smokey black beans (mixed w ketchup & smoked paprika).
I love relaxed but productive Sundays like these. Hubby and I, at home together all day while it's raining outside. I did go outside for a long run and then made apple sauce of all the remaining apples. After that we cooked this delicious plantbased dinner together! 💕
I planned on making my eggplant / sweet potato / peanut butter stew but last week my mom brought me a jar of brinjal (sweet & spicy eggplant pickle) ❤️ and a packet of papadums so I subbed the the brinjal for the peanut butter. It was sooo good. It gets a lot of veggies in hubby too!

And dinner was yummmmm AND hubby liked it too! It was an eggplant, sweet potato stew w peanut butter 😍

I omitted the oil and added ¼ cup of red lentils + half a cup of water to up the protein. Freezes well and is awesome with any veg! And a super easy way to eat more veggies bc it doesn’t feel like you’re eating vegetables, just a yummy sauce 😊
This week's breakfasts! Blueberry banana Nutella oatmeal / apple oatmeal / sweet potato chocolate smoothie ❤️ + an oat bar / strawberry banana oatmeal / oat bar + green smoothie (packet) 👍🏼 / ww bread w pb, sambal & lettuce + pb & chocolate sprinkles / strawberry blueberry oatmeal Loving the smoothie packets. The night before work I take one out of the freezer and let it thaw in the fridge. In the morning just chuck it in the blender, add some almond milk and blend away. I have it w an oat bar (if I don't chew, it doesn't feel like I've eaten 😆) - perfect quick breakfast which can easily be eaten on the go!
I was so hungry after my bike ride and loaded up my plate w 400+ grams of tahini curry stir fried veggies and baked sweet potatoes. Topped it off w some steamed tempeh.
I couldn’t finish it all, guess I left about about 60g. Total veg intake today: breakfast 150 + lunch 200 + dinner 350 = 🌟700g🌟! I didn’t hit my goal but I DID eat a lot of healthy, delicious, nutritious plants 😊

On the weekend I made a big batch of baked oatmeal loaded w veg! In my food processor I chopped up half the large yellow zucchini/summer squash, carrots, sweet potatoes and a couple of apples. I then added 1 cup of oats, 1/2 a cup of shredded coconut ann raisins. Also pumpkin pie spice and extra cardamom. Today I had it with cashew maple frosting.

It's funny how different cutting methods get me all excited to eat a certain food that I'm bored of.
Oats & sweet potato w pb bc i was up @ 5:30am (darn mosquitoes) so hungry! Hubby& i will probably develop a peanut butter allergy w the amounts we eat... we go thru a jar a week. Hubby wants to do a peanut butter detox in september lol
