Delicious! Savoy cabbage sauteed with garlic, topped with walnuts, balsamic reduction & parmesan. Penne aglio olio. Hummus on the side for creaminess.
Tried something new with celeriac (I usually only use this veg in soup): in a pasta dish, mashed up to serve as a sauce with sauteed onion, garlic, butter and some soy milk. I used this recipe but used sauteed mushrooms instead of pancetta. It was nice!
Grilled veg pasta. 🍝 It was sooooo good! And simple!
Roast zucchini and eggplant (I added the tomato as well), toss with pasta and red pesto. Top with pine nuts & mozzarella.
9/10 This one's a keeper!!!

A very green dinner. Pasta and pesto with peas
I had 2 cups frozen, sliced mushrooms. Browned them, straight from the freezer, in a little bit of oil, a whole garlic clove, dried oregano & thyme. Turned up the heat at the end to let all the water cook off, added a splash of:
- soy sauce
- balsamic vinegar
- a 1/2 tsp butter.
Turned off the heat. Added black pepper.
So yum!
I added them to whole wheat pasta and broccoli, nothing else needed. A side salad of lettuce and radishes with a thinned out hummus dressing 👌🏼
Left: simple pasta pesto w garlicky sauteed spinach and cannellini beans
Middle: leftover steamed chinese cabbage in a salad! Very yummy! With a creamy yogurt tarragon dressing. Also: spinach, pickled red cabbage, kidney beans and crushed wasabi peas.
Right: oil free brown rice, steamed broccoli, carrots and onions with cashew sauce! So good after a weekend (away) of eating too much pie, luxurious breakfasts and dinners!
Super easy and delicious pasta! Roasted cherry tomatoes with garlic, kalamata olives and a bit of olive oil 😍😍😍

Would I make this again? I used vegan ground beef so hubby could have a vegetarian dinner as well (he doesn't like tempeh), but we're both not a fan of the veg ground. He doesn't think it resembles meat and I find it too processed. Plus, it makes me super gassy 🤭 The seasoning of the recipe, however, was very good! Very flavorful. 👍🏻 So I will definitely be making this again but probably with a more whole foods meat substitute.
Z & I made a new covid-proof fall/winter bucket list and one item was to try a new fall recipe! Saw this rotolo by Jamie Oliver on TV and decided I wanted to try it. It's basically fresh lasagne sheets stuffed with roasted pumpkin, spinac, red onions and feta cheese. Roll them up and stick them into a simple tomato sauce, top with parmesan and bake. Lovely!

D - peanut butter banana cacao smoothie ; ww spaghetti w veggie marinara, sautéed garlic cabbage and crumbled masala kidney bean burger + glass of wine ; piece of dark chocolate
Green day. Tired! We worked in the garden for 2 hrs. Wish I could eat more but I won't.

Meals 13&14!
6hrs of physical labor hence the extra piece of fruit.
PLUS! ADD A SPOONFUL OF HUMMUS TO YOUR PASTA SAUCE! Makes it all creamy and yummy!
Tried the Everyday Happy Herbivore creamy sundried tomato pasta sauce. Basically blend plant mylk w rehydrated dried tomatoes, nooch & herbs. We liked!
Still unemployed and eating is crap but on the bright side: I made gnocchi for the first time from leftover mashed potatoes #thrifty and I have also learned how to can my homemade apple sauce!
leftover cauliflower + roasted pumpkin + nooch + spices = oil free, creamy, healthy pasta sauce!
