Whenever my mother inlaw goes on vacation she always gives me her leftover onions 😂 (and other fruit & veg that might go bad) but of course this always seems to happen to right after I've just bought a new bag of onions myself! So after Googling "what to do in with onions" I made my first ONION JAM ever! Used this recipe but added cloves for some spice. It is sooo good... Especially with cheese! But also as an oil free low fat salad dressing! Yum....
The dressing:
2 whole Roma tomatoes
Tablespoon of tahini
2 garlic cloves
A nice dash of cayenne
A pinch of salt

Making tahini dressing.
Simply combine a rounded tsp each of miso paste and tahini, the juice of half a small lemon 🍋 and water to mix. Season to taste with freshly ground black pepper.
Especially nice drizzled over greens, for example spinach salad or steamed kale but great with any salad veggies.

Blend: 1 CUP CANNELINI BEANS + 1,5 GRILLED RED PEPPERS (add some water, vinegar, onion powder, pepper, etc.) Delicious!
✔️ Meal prep tip: I like meal prep and I don’t at the same time. I love starting a week knowing my week is stocked with healthy & delicious food. I don’t like slaving in the kitchen on Sunday afternoon when the sun’s out. So what I sometimes do is when I make my breakfast on Sunday, I don’t make 1 but 3 or 4 servings. Same thing for lunch and dinner WHEN IT’S TIME TO MAKE THOSE MEALS. It won’t save me time but it just feels differently. I was gonna be in the kitchen anyway then, might as well set out some Tupperware and fill those up with whatever I’m making. Still got my afternoon off to do whatever I want 😉

⭐FAT FREE ITALIAN DRESSING⭐ 200 ml water 1 tbsp psyllium husk 1-2 tbsp balsamic vinegar 1 tbsp mustard 1 tbsp agave syrup
Stir in dried Italian herbs, onion and garlic powder, turmeric & black pepper because by now we all know you just need to add that stuff to everything 😏
Put into a jar and shake! Refrigerate until use!

I blended carrots, ginger and fresh turmeric. Also added orange juice, garlic, vinegar and a handful of cashews.
No oil salad dressing recipe
2 tsp mustard (called for Dijon, I used regular) 1 tsp red wine vinegar 1 tsp balsamic vinegar 1 tbsp water Agave to taste (I tripled the recipe to have some extra and use 1tsp agave when tripling, so just a couple drops if only making one serving.
Then I added a dash of garlic and onion powder.
It was really good!!
And after work I’m stopping by whole foods to grab an enormous salad to eat with my new love.

I made an oil free French dressing but it tastes more like 1000 island. Blended cooked potatoes and carrots w water, tomato paste, acv, some agave, almond butter, onion & garlic powder. Pretty good!
