Sunday we did a spontaneous BBQ even though I didn't have much in the house (which is not true 99% of the time lol) . But those situations often lead to new and interesting combinations!

I had a bunch of radishes lying around of which the greens I had already used up in a curry (recommend!). I felt like tzatziki and since we didn't have any cucumber decided to use the radishes. Added dill. It was a great topping for our BBQ baked potatoes!

I also used mandolin to slice up bulb of fennel. No dressing needed. So flavorful. Summer in your mouth.

We also grilled Romaine lettuce. After grilling I added a delicious dressing of red wine vinegar, olive oil, and chopped garlic, shallots, capers and parsley. Super yum!

The leftover radish tzatziki and fennel I threw together with some extra rice vinegar and today I had it on a ww pita, like fatoush. 😊

Rekindled my cooking vibe, lol.

Sunday was date night! We picknicked on the beach (take away salads) and then had coffee at an almost empty beach pavilion (first time out!). We shared a tiramisu. Tuesday was our first dinner over at the inlaws since C, hence dessert.

Treats (aim: max. 10): 13

A lot of soup this week. I'm a cook once, eat thrice kind of girl! Plus two recipes (pics 1+2) from Jamie Oliver's cookbook Veg: leek pasta and roasted veg topped with puff pastry and then flipped over to make a sort of pizza. They were okay. I bought light mozzarella for the pizza and that was a big mistake. Zero taste.

Also made another Everyday Happy Herbivore recipe (pic #3): chocolate mug cake. It turned out kind of gummy. I'm gonna say I wouldn't be a rush to make it again but I know myself: if I'm craving something sweet and this thing comes together within 10 minutes (microwave 😅) I probably will hehe...

We renewed our library membership (since we're not going anywhere this summer lol) and I loooove it! I read 2 books in a week and a half and reading in the sun is now officially my favorite pastime. Ha.

Another pro is we can borrow cookbooks! So I'm trying 2 recipes from Jamie Oliver's cookbook Veg this week. I'm making a sweet leek carbonara at the moment.

EXERCISE week 29

Goals:

✔️ 2 runs/skates/elleptical

❌ 2-3x a week at least 2 reps of the following:30 squats, 30 push-ups, 30 dips

Highlights:

❤️ We walked into town Sunday and got an ice cream cone.

❤️ I treated myself to a run in a new place! Discovered a park in a city 15 min from my house.

As to doing my calisthenics, I just can't motivate myself to do them at the moment 🤔

Yes! 3 green days!

My 3 meals from Sun-Tue. Non-pictured: pre-dinner fruit and I allow myself a piece of dark chocolate once a day, if needed 😉

Yummy stuff: leftover peanut cabbage in a toasted wrap, tofu and cabbage braised in a coconut sauce, mom's salads 😍

I forgot! Sunday was a yellow day - date night! We walked into town and got an ice cream cone and enjoyed it in the sun 😍

Thoughts: Sunday was exempt, we had dinner at my parents. Had three treats: a sweet, appetizers and dessert. Wednesday was a red day... I didn't sleep well... Gave in to cravings, 4 'treats'.

Sunday was an s day / exempt - dinner at parents: veggie sushi! And apfelstrudel for dessert. So international, lol.

Today, a green day. I decided to use up some frozen mushrooms in lentil meatballs. They tasted okay but the texture wasn't really good, much too soft.

Sunday (day 1) we went over to my FIL and I had decided beforehand it would be an S day (orange / exempt). But my MIL baked cookies (which were really good!) and gave us some to bring home. I knew it was going to be really hard to have to wait till Friday! Tuesday I caved... Next time I will either have them preplated with a meal or freeze them right away.

Wednesday was another red day, I don't know... I taught a 2hr lesson via zoom in the evening and after that I felt super hyper and I just didn't care, I wanted food. Or a drink.

Maybe I should take meal pics again this week to help me get back on track.
