Bad pic but quick, healthy and delicious lunch: leftover rice, kale and tofu from freezer microwaved with soy sauce, mustard, curry powder. Topped w tomatoes and light tahini.
I had a whole wheat wrap, spread with hummus and filled with a lentil keftah, lettuce & arugula.
On the side: a chocolate smoothie (banana, blueberries, spinach, cocoa powder, turmeric, soy milk, peanut butter).
So yummy and nutritious!
Simple 5 ingredient salad:
Rocket
Beets (another delicious option would be: strawberries or raspberries!)
Walnuts
Feta cheese
Balsamic vinegar
This savory oatmeal was delicious! And contains almost 22g of plant protein.
1/2 cup oats
A little less than 1 cup of bouillon
1 tbsp flax seeds
100g frozen spinach
2 medium mushrooms
1 tbsp toasted pine nuts
1/2 cup cannellini beans
Fresh basil

Rainbow lunch ♥️
It was sooo yummy! And it can be eaten hot or cold, score!
For 3 lunches, mix (approximately):
1.5 cup cooked brown rice
1 cup cooked chickpeas
1/4 cup hummus (thin out with water & white balsamic vinegar)
1/4 cup Kalamata olives
1/2 cup cooked and drained spinach
1/2 cup cooked and drained kale
1/4 cup sliced and cooked mushrooms
Dried oregano & chives
Leftover broccoli w beans & Asian dressing. Whilst cooking dinner I roasted some pumpkin which I threw together w some chickpeas, arugula & balsamic reduction for a quick and easy salad.

This was lunch in my nerdy BPA free lunch container (microwave freezer dishwasher proof) of which I bought 3 for a euro/piece at the thrift store. 🤓

Made this 👆🏼 did add some red onion, apple butter & balsamic vinegar. Would be nice with dried cranberries if I had any lol. I used these ingredients and it came out to 8 servings total. I shared it with mom. What's nice is you can eat it warm or cold.
1 can lentils
1 can chickpeas
1 box frozen kale 450g, steamed
2 medium large orange sweet potatoes
500g package of cooked beets
Pumpkin seeds
Lettuce, zucchini noodles, wfpbno Alfredo sauce, sweet potato fries, black beans, balsamic drizzle & date and Brazil nut for dessert.
One of the best cookies ever from the market in Gouda (Bakery ’t Stoepje). “Speculaas haverkoek” (Pumpkin pie spiced oatmeal cookie). I think there were slivered almonds in there too! So delicious and chewy….! 😍 & Kale / mustard / vegan mayo / ketchup toasted sandwich w cherry tomatoes and picklessss. Great way to eat kale 😁

Sunday = food prep day! 2x overnight apple pie oats 2x overnight banana bread oats 2x bean burger & berry salads 2x orange tahini chickpea salads 1x orange tahini black bean salad 3x raw veg snack baggie for hubby ♡ Tip/hack: save the little sushi take out soy sauce bottles to bring your own dressing for lunch salads!
