What I ate today

(I don't always eat this healthy but today it felt good to pack in the veggies 😉)

B - yummy beet smoothie ⬆️ including 120g of cooked beets, a 🍌 and 🫐

L - 2 slices of toasted whole wheat with hummus, radishes, dried 🍅, 🥬 & 2 ww crackers w pb, a dried apricot, one tiny (4g) square of dark 🍫

S - 🍇

D - udon noodles with tofu and sweet & sour stir fried 🥕🧅 🥦, 4g dark 🍫!

B - soy latte / toast, 1 w peanut butter & 1 w tofu 'egg' salad, beet smoothie* 📸

L - ww wrap w hummus, grilled red pepper, marinaded mushrooms, spinach & chickpeas 😍, nuts & raisins, fresh ginger tea

D - grapes, penne/macaroni w veg, piece of dark chocolate 📸

* SIMPLE BEET SMOOTHIE

120g cooked beets

1 cup frozen raspberries

2 mazafati dates, chopped

1/2 cup water

Beautiful superfood salad I put together for lunches this week.

Beets, sweet potato, kale, lentils, chickpeas, and pumpkin seeds.

Wanna make ❤️

Made this 👆🏼 did add some red onion, apple butter & balsamic vinegar. Would be nice with dried cranberries if I had any lol. I used these ingredients and it came out to 8 servings total. I shared it with mom. What's nice is you can eat it warm or cold.

1 can lentils

1 can chickpeas

1 box frozen kale 450g, steamed

2 medium large orange sweet potatoes

500g package of cooked beets

Pumpkin seeds

What i ate today:

B} Banana walnut oatmeal + strawberries

L} Pizza salad, orange, nuts & dried fruit

D} ww pasta w spinach pesto & iron lady salad ;) 🌟

🌟 IRON RICH DINNER FOR MOM 🌟 (My mom is getting ready for heart surgery but her hemoglobin is too low. So i made her this salt free iron rich dinner!)

Salad ~ spinach, home cooked lentils (+ bay leaves, cloves, star aniseed, garlic), grated raw beets, walnuts, chopped dried apricots, onion, avocado & a dressing of balsamic vinegar + apple butter.

Whole wheat penne + homemade spinach pesto ~ toasted pine nuts, white beans, raw spinach, garlic, generous amount of nooch, some water, lemon juice. Topped w basil.

She loved it :)
