We already miss the Austrian mountains but the Dutch skies make for spectacular sunsets.
6,5km hike around an artificial lake in Austria. Beautiful! Took a chickpea salad in my thermos. Great food to take on hot days like these.
To celebrate the fact that we are officially back in NJ here is a lil compilation of various car meals/snacks that have gone down on this trip

Vegan hotel room meals during our awesome UK road trip. Lettuce & canned beans are always good. Add avo 'nd corn for a Mexican vibe. Vacuum packed corn on the cob is so easy and delish. They have water cookers in E V E R Y hotel or B&B here so you can warm easily warm them. And... they have canned boiled potatoes!!! Tried them. I do not recommend them! Especially since you can get a warm jacket potato basically everywhere.
This is one of my favorite meals to cook when I’m after a quick healthy and filling dinner: fried rice noodles with broccoli tomatoes and spring onion. In a pan gently fry
1 inch sized piece of fresh ginger (finely chopped) 3 spring onions (cut into small rings) 2 tomatoes (cut into small pieces) 1 broccoli (cut into small bits)
in 1 tbsp of coconut oil.
In the meantime soak 200g rice noodles in hot water for about 5 mins. Drain the water and add the noodles to the veggies with a few splashes of soy sauce. I love my broccoli when it’s still crunchy so a couple of minutes is enough to mix everything well without overcooking the veggies.

Bought whole grains at the toko/Turkish store: barley and dark bulgur and rice noodles for our road trip (noodles soaked in hot water + hot pb + raw veg = dinner!)
