We played pool last night with S&G and it was so long ago, I had forgotten how nice it is.
I had a really nice day! Late breakfast of course.

Last night was nice, we went over to P&K. O&D came over, too and we played the Friends Scene It game. After that I took a really long, hot bubble bath whilst reading a new library book! 🛀🏼 📖 It's titled "Big Lies in a Small Town" by Diane Chamberlain, I'm really enjoying it.
Today we slept in but after that I got a lot of stuff done that I've been putting off for ages: I mended a cardigan, polished my leather boots, ordered stamps 🤭. I also simplified my wardrobe. I've been reading about Project 333 and I packed up like half the clothes I had in my closet. I still have like 60 items in there but it's literally given me some air. So we'll see how that goes. ☺️

Brinjal eggplant sweet potato stew
I love relaxed but productive Sundays like these. Hubby and I, at home together all day while it's raining outside. I did go outside for a long run and then made apple sauce of all the remaining apples. After that we cooked this delicious plantbased dinner together! 💕
I planned on making my eggplant / sweet potato / peanut butter stew but last week my mom brought me a jar of brinjal (sweet & spicy eggplant pickle) ❤️ and a packet of papadums so I subbed the the brinjal for the peanut butter. It was sooo good. It gets a lot of veggies in hubby too!
- 3 onions
- An eggplant
- Raz el hanout or garam masala, cumin, chili
- 2 small cans tomato paste
- 2 large sweet potatoes
- 4 cloves of garlic
- 1/4 cup lentils
- Enough water to make sure it cooks without burning (I added about 2 cups)
- A tablespoon of brinjal
- Lemon juice to taste
- Papadums
Pure relaxation
After a 10 min HIIT on the elleptical and a one minute plank I feel even more relaxed than a day at the spa. The amazing benefits of exercise. I should treat myself more often!
Rode our bikes to the lake and picnicked there for dinner ❤️
Rode my bike to therapy Thursday. 15km/1hr one way. It was beautiful. It truly was gift to myself. Kind of like therapy. 😋 The morning dew in the meadows. That kind of vibrance in the early morning air where you can feel it's going to be one of those hot, windless summer days. Bought a bag of delicious prunes along the rode. Tried to pet a sheep lol. I love feeling so close to nature. It fills my soul.
Went for a walk. The colors were so vibrant!
