Comforting vegan vegetable soup
I'm sick (but well enough to make soup 😋) and sometimes I crave that old fashioned chicken vegetable soup with a clear broth but lots of umami. This comes pretty close!
- One large yellow onion
- 1 huge carrot
- 4 stalks celery
- 4 small potatoes
- 1 cup lentil mix (mine had 5 varieties - see pic below)
- 2 liters of water
- 2 bay leaves
- 1/2 tsp turmeric
- Black pepper
- Lots of grated fresh ginger
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp dried sage
- 1/2 tsp ground coriander seeds
- 1/2 tsp dried chervil
- 1/4 tsp cumin
- 3 tsp salt
Cut up all veggies into desired size. Sauté in a little bit of oil, then add water and bay leaves. Add all the spices (except the salt) and let it simmer for about 25 minutes. I add the salt in the end because sometimes it can toughen the outside of the lentils.
This makes 3 liters. It's even better the next day!

8:00am - blueberry oatmeal w nuts & flaxseeds (soaking the oats in OAT milk makes it really nice and creamy..!)
12:45pm - date, buttered banana bread, lentil veggie soup & a persimmon
6:00pm - kiwi & lychees; smoked tofu & steamed Brussels sprouts, parsnip & carrot w a little bit of butter & caraway seeds. Some dark chocolate (70%) for dessert!

Budget bytes' roasted cauliflower salad (except I never took the effort to make the dressing, I just added hummus #lazy)
Oh She Glows' 10-spice vegetable soup (delicious but a lot of prep)
B - EHH morning glory muffins, blueberry banana spinach smoothie
L - toast w hummus, veggies, pb & dried fruit, pce dark chocolate
D - a pear, some nuts; boiled potatoes, runner beans, EHH tempeh loaf + EHH miso gravy

Basically water, nooch, miso.
Would I make this again? It wasn't as salty and strongly flavored as I had expected but just right. It really added that necessary moistness to my potatoes and tempeh loaf. Would make this again.

Sunday was date night! We picknicked on the beach (take away salads) and then had coffee at an almost empty beach pavilion (first time out!). We shared a tiramisu. Tuesday was our first dinner over at the inlaws since C, hence dessert.

A lot of soup this week. I'm a cook once, eat thrice kind of girl! Plus two recipes (pics 1+2) from Jamie Oliver's cookbook Veg: leek pasta and roasted veg topped with puff pastry and then flipped over to make a sort of pizza. They were okay. I bought light mozzarella for the pizza and that was a big mistake. Zero taste.
Also made another Everyday Happy Herbivore recipe (pic #3): chocolate mug cake. It turned out kind of gummy. I'm gonna say I wouldn't be a rush to make it again but I know myself: if I'm craving something sweet and this thing comes together within 10 minutes (microwave 😅) I probably will hehe...
One day fruit & veggie fast after a weekend of potato chips, Ben & Jerry's, cookies & cherry pie 😬😋
