Easy, delicious, vegan pot pies!

I'm psyched.

I had to eat but didn't know what. We were out of fresh veggies. I had a bag of frozen vegetable medley in my freezer and didn't feel very inspired. Went online for some ideas and saw a picture of frozen veggie chicken pot pie which made me drool. So I googled: "easy vegan pot pie" and this recipe by the Minimalist Baker came up. What I love is that her recipes are truly simple and her list of ingredients is not overwhelming. I had everything I needed except vegan biscuit dough. I remembered a recipe for it in the Everyday Happy Herbivore cookbook! Also had all the ingredients for that (whole wheat flour, baking powder, salt, plant milk) except applesauce... Hmmm. So I tried aquafaba! And it worked like a charm. No chickpea taste 👌🏼and the Minimalist Baker's pot pie filling is so, so good and comforting! I think I even like it better than the biscuits!

Really happy to have discovered an easy, delicious and fool-proof recipe for pot pie filling. 😊 Oh, and I used oat flour as a binder and it worked well, too!

Hubby and I are sick at home. I felt like cooking. Had some filo dough laying around in my freezer for months. It was annoying me so I turned it into the above pictured deliciousness!

❇️ VEGAN & OIL FREE SPINACH PIE ❇️

Night before: defrost approx. 500g of frozen spinach

Defrost filo dough (this takes longer than you might think…)

Make filling: Steam sauté in water and soy sauce: 1 onion, 4-5 cloves garlic, 1 red bell pepper until softened and browned. Toast pine nuts and add. Add sliced black olives, capers, chopped dried tomatoes. Basil. Pepper. Nooch. Mix with spinach. Add 1 cup chickpeas and mash slightly. Add 1-2 T tahini for creaminess.

Wrap stuffing in filo dough and glaze dough w almond milk. Sprinkle w ground coriander. Bake 20 min @ 200C.

This was a success! Brought it along to my parents and they loved it!

½ butternut squash, cubed 2 stalks white chicory, quartered 3 small red onions 4 garlic cloves Caraway seeds, dried sage, ground cumin, ground coriander seed ~1 tsp each

Roast on a baking sheet, covered w aluminum foil for 55 min @ 200C. Half way, take out the chicory. Broil last 10 minutes.

Oil free dressing: Mix 1 T apple butter + 1 T balsamic vinegar w the mashed roasted garlic.

Serve on a bed of rocket w walnuts!
