My veggie version vs hubby's lol
Sabich!!! Israelian-inspired sandwich I've been wanting to try for a while. In this case a whole wheat pita stuffed with roasted cauliflower & eggplant, tomato, pickles, a boiled egg, mango chutney and homemade yogurt garlic sauce. Mega yum 😍🤤

Last night was nice, we went over to P&K. O&D came over, too and we played the Friends Scene It game. After that I took a really long, hot bubble bath whilst reading a new library book! 🛀🏼 📖 It's titled "Big Lies in a Small Town" by Diane Chamberlain, I'm really enjoying it.
Today we slept in but after that I got a lot of stuff done that I've been putting off for ages: I mended a cardigan, polished my leather boots, ordered stamps 🤭. I also simplified my wardrobe. I've been reading about Project 333 and I packed up like half the clothes I had in my closet. I still have like 60 items in there but it's literally given me some air. So we'll see how that goes. ☺️
Delicious! Savoy cabbage sauteed with garlic, topped with walnuts, balsamic reduction & parmesan. Penne aglio olio. Hummus on the side for creaminess.

Tried something new with celeriac (I usually only use this veg in soup): in a pasta dish, mashed up to serve as a sauce with sauteed onion, garlic, butter and some soy milk. I used this recipe but used sauteed mushrooms instead of pancetta. It was nice!
L's veggie lasagna, instead of ground beef: lentils, mushrooms, walnuts, green olives & capers. Yum!!! ❤️
After the meeting I binged on cookies... I felt crap the next morning. Late night eating, especially containing a lot of sugar, is not good for sleep. It's better to make a mug of hot chocolate or something. In the end the drink fills me up and would be a lot less calories than food.
Out of my cooking rut! Only posting new recipes that turned out good. This was a simple one but so good, I had leftovers for breakfast the next day and then went and made a whole pot again for lunch and to stock the freezer.
GREEK BEANS 2.O
I have a go-to recipe of Greek beans where you bake them in a minty tomato sauce. But this one doesn't require an oven and works well with canned beans or beans cooked from scratch. I did both.
It's so easy, you cook the beans for half an hour in broth with lemon juice, bay leaf, oregano, onion, garlic, tomato paste. Before serving add chopped black olives. Super yum!
New recipe: Kinpira
Japanese-style carrots! Julienne them (I tried lol) and stir fry in sesame oil and chilies, then add mirin and soy sauce.
7/10 This is one of those recipes that don't blow you away but you end up making them again because they're cheap and easy!

To get myself out of a cooking rut I am re-challenging myself to cook a new recipe every week!
This was a nice vegan potato curry from a huge vegetarian cookbook that I bought for 50 cents during the pandemic. Hubby liked the spices. We had naan on the side. Next time I'd add some fresh spinach in the end for some more color and veg. 7/10
The Chinese Cabbage, Episode 4
This. Was. So. Good.
I sauteed leeks, Chinese cabbage, garlic, curry powder, black pepper and nutmeg in an oven-proof dish. Added a knob of butter. Topped it with mashed potatoes, sprinkled Panko on top and broiled it until golden. Had it with mashed cannellini beans. Very comforting!

8:00am - blueberry oatmeal w nuts & flaxseeds (soaking the oats in OAT milk makes it really nice and creamy..!)
12:45pm - date, buttered banana bread, lentil veggie soup & a persimmon
6:00pm - kiwi & lychees; smoked tofu & steamed Brussels sprouts, parsnip & carrot w a little bit of butter & caraway seeds. Some dark chocolate (70%) for dessert!
C cooked this for us tonight and it was so delicious and comforting 🥰
