I am not a huge fan of cold soups, or of gazpacho at all as a rule, but this gazpacho, no exaggeration, changed my life.
I use an immersion blender and a deep bowl for the pureeing, and it works great, once you get the solids and chunks broken down a little.
I've tried the soup both strained and unstrained, and it's delightful either way. The unstrained version is quite robust with the peppers and garlic and onion, while the strained iteration is much more delicate in flavor. I love both. (Today I think I'll strain it.)
This recipe has nearly 7000 five-star reviews on NYT. I'm not generally one to offer unsolicited advice, but here I must insist: you really do need this in your life. It's one of the most refreshing and perfectly balanced dishes I've ever tasted. For my money, the best way to enjoy it is to sip it, well-chilled, from a rocks glass.
