This could be referring to both Dipper and Mabel, shortly after the Transcendence. Despite everything the world has thrown at them, despite Dipper technically being sorta omniscient now, they’re still both young and naive. They’ve had to acquire a number of skills to fit their roles in the new world; for Mabel, that’s fighting bad guys, and for Dipper, that’s tricking and scaring the people who summon him.
The mood it changes like the wind Hard to control when it begins
Dipper definitely suffers from mood swings though, especially as he’s growing up and getting more used to what he’s become. His demonic nature can shine through at any moment, and sometimes it’s not under his control (like during a magic storm).

He counts his own flaws, because he hates what he’s become. Clawing his way out could refer to literally tearing away binding spells used on him by summoners, and this is enhanced by the fact that he literally has claws.
But it could also refer to metaphorically removing himself from the suffocating stress of being a demon, in a Return Rewind Rewrite sort of way. Making a human body and living in it without his memories or magic is a temporary escape – an escape from his flaws and from his claws. That escape comes to an end when his magic permeates through the barrier he set up around himself.

Dipper and Mizar go stargazing, and he holds on tight because he knows he’s going to lose her sooner or later. He entrusts her with his true name – a secret she’ll take to her grave.

This feels like it’s talking about the death of something or someone Dipper loves. Even though he’s immortal and invulnerable, everything else withers; everything else crumbles and is reduced to sickness and death. Henry burns out, Mabel gets old and feeble and dies, the triplets go one at a time, Belle dies, Mira dies, etc, etc. Even the planet Earth shakes in the path of the sun’s fiery destruction one day.

Dipper has to watch these deaths, these losses, over and over again, and know that he’ll still go on. He doesn’t know why he gets to be the one who has to go on, because he’s made so many mistakes. He’s become such a horrible person. His loved ones forgive him, but he can’t forgive himself. Sometimes, he tries to let go of them before death takes them away just so it’s not as devastating when it does inevitably happen.
The bittersweet between my teeth Trying to find the in-betweens
“Bittersweet” and the fact that the song name has the word “blood” in it draws a picture of Dipper in demon mode having just killed someone. There’s blood on his teeth and it tastes both delicious and awful. It’s a wake up call – he doesn’t like what he’s become.
And yet, it’s really hard to become anything else. It’s well known that as the centuries go on, he switches back and forth between a good state and a bad state, usually correlating with whether or not he has any human loved ones at the time. He wants to find some sort of in-between, some way that he can stay sane and grounded and whole even when there aren’t any loved ones in his life. He wants to be able to tolerate loss without going full evil-monster-mode for 50 years.
(As an extra note, this also brings to mind the concept of “the in-between”, the place souls stay between reincarnations. He often calls this “the place I cannot follow” because, unless a soul chooses to visit him between reincarnations, they’re lost to him during that time. No matter how hard he searches, he cannot find the in-between.)
Fall back in love eventually Yeah yeah yeah yeah
This is just a reminder that he won’t stay in this bad state forever. He’ll find a new loved one, a new person or group of people to keep him grounded, and things will be better then.
