There's a lot of them! At the risk of being the sort of person Žižek calls out for wanting '1789 without 1793', a lot of my favourite moments come from the early days of the revolution.
2. Second is probably the Women's March on Versailles! I think it really highlights just how important women (and mostly working-class women in this case!) were as a political force. This is something that people often forget, thinking that just because women didn't have political rights in the modern sense it meant that they had no influence on politics whatsoever. Events like this prove that this was hardly the case.
3. To move on from 1789, I am also fascinated by the merging of the revolution and religion. That's why I'm interested in the revolutionary festivals, like the Festival of the Supreme Being. (It gets such a bad reputation in a lot of historical sources, but if you look at the Catholic festivals which this was supposed to be an answer to... don't tell me they often didn't feel just as extra).
But what I find most interesting is how a lot of secular figures basically achieved the status of a saint in revolutionary France. Case in point: Marat (re: David's painting), Voltaire and - sigh - yes, Rousseau.
Just look at Rousseau's provisional mausoleum from 1794, in which he was buried before they moved his remains to the Panthéon:

The 20th of Prairial (8th June) was the Festival of the Supreme Being. Robespierre was chosen unanimously by his colleagues in the Convention to preside over the ceremonies. As far as his friends were concerned, it was an honour he deserved. This enabled others to shake off on to him the responsibility for a demonstration of which they did not approve.

Robespierre gave the following speech on the Supreme Being on 7 May 1794. He punctuated it with the proposal of legislation which scheduled a festival in the Being’s honor for 8 June (20 Prairial).
The reactions to the festival highlight two of the myths about these months: first, that this was a [national] dictatorship devoid of popular support; and second, that the deputies had been intimidated into silenced by a tyrant. The Cult of the Supreme Being had the uncanny property of appealing both to popular elements of Catholocism (especially at a time when most of the clergy had deserted the people) and those who wanted a Cult of Reason and Nature. The crowds were vast: the promise of renewed harmony seemed to have struck a deep chord. An estimated half a million people - most of the population of Paris - turned out for the celebration, but the sneers and innuendos from some of them were audible. Certain deputies were irritated by Robespierre’s pre-eminence and said so… Certainly the pre-eminent role that Robespierre played at the festival was a serious miscalculation.
