Bioluminescent fungi were Morgoth’s attempt at courting Varda. They combine her light with his themes of corruption, decay, and being a chaotic bastard who can’t be labeled properly, just like how fungi don’t fit into the plant/animal kingdoms. It’s another reason why he destroyed the Trees: they did what he wanted his creations to do, only better.
