Low fat raw mexican style portobello mushroom burgers!
Ingredients used (per pizza): Tomato Sauce: 1 tomato, lemon, 1 date, red pepper, sundried tomatoes and herbs to taste. Avo cream layer: 1/8-1/4 avocado, 10 cherry tomatoes, red onion, cilantro and lime juice. Pizza: two roma tomatoes, mushroom cap and your desired toppings. I used cherry tomato, hot pepper, red pepper, scallions, and more cilantro.
Recipe:
- make tomato 'paste' with sundried tomato, lemon juice, date, red pepper, fresh roma tomato
- clean stem/gills out and marinate in lemon juice and the more watery tomato mixture that separates from your paste
- dehydrate along with half of your tomatoes (also can go in oven on lowest temperature if you desire)
- while waiting make avo cream sauce by blending ingredients listed
- assemble pizza when cap is soft with tomato paste, dehydrated tomato, avo sauce, more tomato paste, and your desired toppings.
- serve on a bed of fresh herbs and baby greens
