I have been without my blender for three months now. I am starting to get a bit tired of simply lemon or lime juice. When I saw tahini at the organic store I jumped at the chance for change. I mixed 1tbs of tahini with the juice of a whole lemon, chopped basil, and water to thin (added after photo). It was a divine change - and I really needed it. Spiralized:
- 2 medium zucchini
- 1 medium/large carrot
chopped:
- baby bok choy
- broccoli
- snow peas
- peppers
- okra
- sprouts
- mango
Dressing (the star):
- 1/2 mango (surprise surprise)
- 1/4 avocado
- half small garlic clove
- slice of fresh ginger
- 3 cherry tomatoes
- 2 sundried tomatoes
- cilantro
- optional small bit of young coconut meat, I had it handy but the sauce is delicious with and without
- 1/2 lemon juiced
