A closer look at my go-to breakfast as seen in many Instagram posts. With a little Liam spam because I love you guys. Banana icecream layered with fresh bananas, blackberry banana icecream and frozen blackberries = the reason I wake up happy

Low fat raw vegan sundried tomato 'meatballs'
recipe:
- 1/4 cup sundried tomato
- 2-3 medium carrots
- 4 medium brown mushrooms
- 1/4 cup mulberries
- basil
- oregano
- salt free seasoning
- green onion
Pulse together in food processor until fairly combined and form into balls. These will be a little wet but will form easily. They can be dehydrated or left in oven with door open at lowest temperature aswell just to firm up. They also can be left in the fridge uncovered for a day to dry out a little aswell. I ate them as is and they were fine!
Usually raw vegan 'meatballs' would be made up of completely nuts and seeds, these are a lighter and easier to digest version with no added overt fats and no lack of flavour!
Fully Raw Chocolate Peanut Butter Tarts!
These are not exactly 80/10/10 but they are lower fat than the average raw dessert. I'm sure some of you have a special someone who may enjoy these aswell as a little treat :) valentines day anyone?
Crust:
- pulse mulberries, raw jungle peanuts, and dates in the food processor until combined and push into tart pan
Filling (this makes two tarts, double up for bigger batches etc):
- 1/8 cup cashews
- half a peeled zucchini
- tablespoon of cacao powder (I eyeballed it, I'm guessing)
- Stevia drop vanilla flavoured or two tablespoons of maple syrup + vanilla
- 2 tablespoons of PB2 powder or 1 tablespoon of natural homemade peanutbutter
- half tablespoon of coconut oil
- water to blend
stick them in the freezer overnight and enjoy :)
edit:
the next day we put one in the fridge for CB to bring to work and it formed into a wonderfully fluffy mousse texture- he liked it better than the frozen version! The zucchini is what keeps the pie fluffy so dont leave it out!
low fat raw vegan sushi. Overt fat free, delicious.
Recipe:
- parsnip rice: parsnips chopped in food processor until rice consistency with small amount of cilantro and lime
- spread ‘rice’ on raw nori
- add mango, green onion, red pepper, cucumbers, carrot, sprouts, and green leaf lettuce
- wet the top end and start to roll gently from the bottom
- service with your chosen dipping sauce, I used a mango, green onion, chili sauce
I prefer parsnip rice over cauliflower rice, it is less messy and easier on your digestion with less smell and flavour.
enjoy!
I haven't been on tumblr in a few weeks basically- I want to say that I received your messages and will answer them soon! to let you all in on a secret I am currently planning a trip through Europe for four months WWOOF'ing with my boyfriend. Its been a lot of pre-planning and we basically are spending all our time on this right now before school gets busy. I am very excited- some of the farms are animal sanctuaries, and the rest are completely vegan. We will be working with animals, picking fruit (FIGS!), and helping cook. I dont ever want to come back
editing a new 'What I Ate" video from today with help from Liam. Stay tuned!
Will be posted at www.youtube.com/user/capitalveg
low fat Raw vegan mashed 'potatoes'
if you follow me on instagram you would have seen this top picture before. I don't like to repeat recipes for you guys incase you follow me on both but this was too good to keep from you.
With thanksgiving and Christmas coming up I wanted to share something you can make over the holidays and still stay fully raw. I chose to eat them in romaine leaves but they are excellent with some green onions on top scooped on the plate like traditional (but without the animal products, saturated fat, and guilt)
Recipe:
- Break up florets of cauliflower and put into food processor (this small amount here is almost half of a medium head so plan accordingly
- add splash of almond milk
- puree, it will be grainy at first but dont be tempted to add too much liquid
- add 1-2 teaspoon(s) of tahini and any herbs/seasoning you would like (garlic, chives, green onion, anything you would add to mashed potatoes)
- puree some more! I have a small food processor/kitchenaid chopper and this took about 5 minutes to get fluffy
- scoop out and enjoy
I love the holiday season, I am looking forward to making these for Christmas dinner
