I made colcannon after my friend suggested it from what I had to work with. I made mine with red potatoes (we prefer to keep the skins on), turnips and cabbage. Then of course my German started to show when my husband found locally made Bavarian liver sausage. I cooked the liver sausage with garlic in a cast iron pan then covered it with the colcannon to bake.
