Using lamb is my version of Guinness stew! We got it from a German butcher precut up! I seared it with salt, pepper and a spoonful of oil (it lets out lots of liquidy fat already) for a few minutes. I did it in three batches so I wouldn't sweat the meat instead of sear it. Them at the end I threw all the meat together, threw some flour in and stirred for a few minutes before adding the three cups of beef broth and one cup of Guinness. Then I brought it to a boil and then covered and summered for an hour before I got up, chopped up the veggies and threw those in as well. Then I went to start making some plain soda bread and let it continue to simmer.
