I was really surprised by the "who are Jack's fathers" discourse when I first watched the late seasons of SPN and I still am.
It's made pretty damn clear that Jack considers Cas, Sam, and Dean to all be his fathers. And the fact that his relationship is so different with all three of them is an important reflection on the show's overall themes of the complexities of family.
