Medovik, honey cake, has long been one of the most popular desserts in Russia, and its sweet story begins in the early XIX century in the Imperial Palace kitchen of Emperor Alexander I of Russia. His wife, Empress Elizabeth Alexeievna, couldn’t stand honey, and any dish made with it drove her angry. One day, however, a young new confectioner in the Imperial kitchen didn’t know the Empress’ dislike and he baked a new cake with honey and thick sour cream. Surprisingly, and unaware of the honey content, Empress Elizabeth immediately fell in love with the delicious cake. The cake became popular quite quick and until today it is loved by many Russians. There are many variations of Medovik. Traditionally, it’s made of numerous layers of honey pastry covered with sour cream and sprinkled with honey crumbs on top. Medovik requires quite a lot of time, so people usually bake it for holidays and celebrations. The name of the cake “Medovik” comes from the word “med” (мёд) which means “honey” in Russian.
