Cutting Parmesan
This month, I've been doing a bunch of chalkboard artwork for Stinky BKLYN, a sweet cheese shop in the Cobble Hill area of Brooklyn. This is a shoddy camera-phone documentation of one of my artistic contributions to the store: a big, fat rendering of Taleggio.
Taleggio is an Italian washed-rind cheese made with raw cow milk. It is traditionally aged for three months but Stinky ages theirs for an additional 30 days. The end result is a much creamier, pungent cheese with a complex, savory flavor of mushrooms and onions. It's amazing.
Try pairing it with a heavy red wine or with fresh tomatoes and sesame bread!
